Bolile cardiovasculare sunt <a href=\"https:\/\/www.world-heart-federation.org\/resources\/cardiovascular-diseases-cvds-global-facts-figures\/\" target=\"_blank\" rel=\"noopener noreferrer\">principala cauza de deces din lume<\/a>, cu 17,9 milioane de victime in 2016. Cancerul este\u00a0<a href=\"https:\/\/www.who.int\/news-room\/fact-sheets\/detail\/cancer\" target=\"_blank\" rel=\"noopener noreferrer\">a doua cauza principala de deces la nivel mondial<\/a>: in 2018, 9,6 milioane de persoane au incetat din viata din cauza lui (1 din 6 decese). In 2017, diabetul a provocat <a href=\"https:\/\/idf.org\/aboutdiabetes\/what-is-diabetes\/facts-figures.html\" target=\"_blank\" rel=\"noopener noreferrer\">4 milioane de decese<\/a>, 425 milioane de adulti traiau cu aceasta boala (90% dintre cazuri sunt diabet de tip 2 si 10% \u2013 diabet de tip 1) si peste\u00a021 de milioane de nou-nascuti\u00a0(1 din 7) au fost afectati de diabetul gestational al mamei.<\/p>\n<p style=\"text-align: justify;\">Nutritionistii avertizeaza ca nu exista un plan alimentar perfect pentru toata lumea de pe planeta, dar ne recomanda o dieta bogata in fructe, legume, cereale integrale si cat mai multe mese gatite acasa. Cand carnea de pui, porc, vita sau peste (bogata in proteine) este gatita la temperaturi ridicate (in tigaie sau pe gratar, la foc deschis), in tesut se formeaza compusi numiti amine heterociclice (HCA, formate in urma reactiilor dintre molecule ca aminoacizii, zaharurile si creatinina) si hidrocarburi aromatice policiclice (PAH, formate cand grasimea si zeama se scurg in flacari si provoaca fum, care adera la carne). Indiferent de tipul de carne, daca este gatita la peste 148<sup>o<\/sup> C sau un timp indelungat, va contine mai mult HCA, iar daca este expusa fumului in timpul gatirii, va avea PAH.<\/p>\n<p style=\"text-align: justify;\">Pe de alta parte, un studiu marca <a href=\"https:\/\/www.sciencedaily.com\/releases\/2007\/06\/070627124111.htm\" target=\"_blank\" rel=\"noopener noreferrer\">Kansas State University<\/a>\u00a0a descoperit ca marinarea carnii in condimente ca rozmarin, cimbru, oregan si salvie pot reduce cantitatea de HCA cu 87%. Nivelul de HCA si PAH se reduce si daca carnea e gatita in prealabil la cuptorul cu microunde, este intoarsa constant pe gratar si nu este inecata in sosuri facute din grasimea scursa in tigaie, spune o cercetare din <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/15971410\" target=\"_blank\" rel=\"noopener noreferrer\">2005<\/a>.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13120 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/gatit-la-gratar.jpg\" alt=\"gatit la gratar\" width=\"640\" height=\"426\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/gatit-la-gratar.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/gatit-la-gratar-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Modalitatea in care HCA si PAH actioneaza, in tandem cu alte substante din organismul uman, este complexa si studiile continua. HCA si PAH pot declansa modificari ale ADN-ului (ce cresc riscul aparitiei bolilor canceroase), dupa ce compusii sunt metabolizati de enzime specifice din corp (diferite de la om la om), printr-un proces numit \u201ebioactivare\u201d. Studii diverse (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/7586210\" target=\"_blank\" rel=\"noopener noreferrer\">1995<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/16157215\" target=\"_blank\" rel=\"noopener noreferrer\">2005<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/16030093\" target=\"_blank\" rel=\"noopener noreferrer\">2005<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/19549810\" target=\"_blank\" rel=\"noopener noreferrer\">2009<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/19307236\" target=\"_blank\" rel=\"noopener noreferrer\">2009<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27032077\" target=\"_blank\" rel=\"noopener noreferrer\">2016<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/26551148\" target=\"_blank\" rel=\"noopener noreferrer\">2016<\/a>) au descoperit ca activitatea acestor enzime este relevanta cand vorbim despre cat de mare\/mic este riscul asociat expunerii ca acesti compusi.<\/p>\n<p style=\"text-align: justify;\">Testele pe animale au demonstrat ca expunerea la niveluri ridicate de HCA si PAH pot <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/15072585\" target=\"_blank\" rel=\"noopener noreferrer\">provoca aparitia cancerului<\/a> de <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/2924403\" target=\"_blank\" rel=\"noopener noreferrer\">colon, san<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/3335050\" target=\"_blank\" rel=\"noopener noreferrer\">ficat, piele<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/6733854\" target=\"_blank\" rel=\"noopener noreferrer\">plamani<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/9000552\" target=\"_blank\" rel=\"noopener noreferrer\">prostata<\/a>, al <a href=\"https:\/\/www.nap.edu\/read\/371\/chapter\/2\" target=\"_blank\" rel=\"noopener noreferrer\">leucemiei si tumorilor gastrointenstinale<\/a> sau ale altor organe (dar experimentele au folosit doze de mii de ori mai mari de HCA si PAH decat ar consuma cineva in mod obisnuit, in alimentatie&#8230;). Studiile pe oameni nu au stabilit o legatura directa intre expunerea la acesti compusi si cancer, deoarece nu pot sti exact nivelul de HCA si PAH ingerat, nici cum variaza activitatea enzimelor sus mentionate si nici daca nivelul de PAH la care au fost expusi subiectii nu are si alte surse externe, de mediu.<\/p>\n<p style=\"text-align: justify;\">Exista atat cercetari epidemiologice care indica o legatura intre consumul mare de carne la gratar si riscul crescut de cancer colorectal (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/20215514\" target=\"_blank\" rel=\"noopener noreferrer\">2010<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27375796\" target=\"_blank\" rel=\"noopener noreferrer\">2016<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/28524104\" target=\"_blank\" rel=\"noopener noreferrer\">2017<\/a>), pancreatic (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/12351162\" target=\"_blank\" rel=\"noopener noreferrer\">2002<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/18086772\" target=\"_blank\" rel=\"noopener noreferrer\">2007<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/27375796\" target=\"_blank\" rel=\"noopener noreferrer\">2016<\/a>) si de prostata (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/16357191\" target=\"_blank\" rel=\"noopener noreferrer\">2005<\/a>, <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/19808637\" target=\"_blank\" rel=\"noopener noreferrer\">2009<\/a>), cat si studii care nu au gasit nicio legatura intre cancerul colorectal (<a href=\"https:\/\/www.cancer.gov\/about-cancer\/causes-prevention\/risk\/diet\/cooked-meats-fact-sheet#r26\" target=\"_blank\" rel=\"noopener noreferrer\">2015<\/a>) si de prostata (<a href=\"https:\/\/www.cancer.gov\/about-cancer\/causes-prevention\/risk\/diet\/cooked-meats-fact-sheet#r27\" target=\"_blank\" rel=\"noopener noreferrer\">2016<\/a>) si gatirea carnii in acest fel.<\/p>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"2-carnea-rosie-riscuri-%e2%80%93-cancer-boli-cardiovasculare-moarte-timpurie\"><\/span>2. Carnea rosie (riscuri \u2013 cancer, boli cardiovasculare, moarte timpurie).<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-862 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2017\/04\/burger-si-cartofi-prajiti.jpg\" alt=\"burger si cartofi prajiti\" width=\"672\" height=\"416\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2017\/04\/burger-si-cartofi-prajiti.jpg 672w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2017\/04\/burger-si-cartofi-prajiti-324x201.jpg 324w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2017\/04\/burger-si-cartofi-prajiti-356x220.jpg 356w\" sizes=\"auto, (max-width: 672px) 100vw, 672px\" \/>Carnea de oaie, berbecut, miel si vita contine o proteina numita hem, care ii da culoarea rosie si care poate afecta \u201ecaptuseala\u201d intestinala, avand drept consecinta <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/21209396\" target=\"_blank\" rel=\"noopener noreferrer\">cancerul colorectal<\/a>. Nu ajuta deloc nici faptul ca fibrele lipsesc cu desavarsire din carne, care ar trebui consumata alaturi de legume bogate in fibre. Si nici faptul ca aceasta este bogata in <a href=\"https:\/\/www.sanovita.ro\/blog\/ghidul-complet-al-grasimilor-grasimi-sanatoase-vs-grasimi-nocive\/\" target=\"_blank\" rel=\"noopener noreferrer\">grasimi saturate<\/a> si colesterol, care pot bloca arterele si creste riscul de atac de cord sau accident vascular cerebral.<\/p>\n<p style=\"text-align: justify;\">Un <a href=\"https:\/\/www.bmj.com\/content\/365\/bmj.l2110\" target=\"_blank\" rel=\"noopener noreferrer\">studiu publicat in 2019<\/a> a analizat legatura dintre consumul de carne rosie si mortalitatea unui numar de 54.000 de femeie de 30-55 de ani si 27.000 de barbati de 40-75 de ani, concluzionand ca exista o legatura directa intre cele doua (mai ales daca cea dintai este si procesata). In total, 14.019 persoane au murit in timpul cercetarii, principalele cause fiind bolile cardiovasculare, cancerul, bolile respiratorii si neurodegenerative.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13121 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/peste-la-gratar.jpg\" alt=\"peste la gratar\" width=\"640\" height=\"426\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/peste-la-gratar.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/peste-la-gratar-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Concluziile studiului au fost ca o crestere cu 3,5 portii\/saptamana a consumului de carne rosie, timp de 8 ani, este asociata cu un risc cu 10% mai mare de moarte in urmatorii 8 ani. Inlocuirea unei singure portii de carne rosie cu peste a insemnat o reducere a riscului de mortalitate cu 17%. Alimentele neprocesate includ radacinile, legumele, fructele, leguminoasele, nucile, semintele, condimentele (proaspete, inghetate sau fermentate, dar netratate cu aditivi, injectate cu sare, frecate cu ulei).<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13123 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/alimente-procesate.jpg\" alt=\"alimente procesate\" width=\"640\" height=\"381\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/alimente-procesate.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/alimente-procesate-324x193.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Uleiurile vegetale, untul, mierea, siropul de artar, zaharul brut sunt ingrediente culinare procesate, iar muraturile, compoturile, dulceata, painea cu drojdie, alcoolul, branza si alunele sarate sunt alimente procesate, infuzate cu zahar, sara si grasimi, pentru a rezista mai mult timp. Ultima categorie o constituie alimentele ultraprocesate, care pot fi (incalzite si) consumate imediat (ceea ce inseamna ca au fost fabricate industrial si tratate cu agenti de ingrosare, coloranti aditivi si cate si mai cate, inainte de ambalare): batoane de cereale, bomboane, napolitane, ciocolata, paine feliata, margarina, iaurt cu fructe, crenvursti.<\/p>\n<p style=\"text-align: justify;\">O cercetare de specialiate din <a href=\"https:\/\/www.cell.com\/cell-metabolism\/fulltext\/S1550-4131(19)30248-7\" target=\"_blank\" rel=\"noopener noreferrer\">2019<\/a> a concluzionat ca alimentele procesate ne determina sa mancam mai mult in fiecare zi (cu 500 de calorii in plus!) si sa ne ingrasam semnificativ in timp, decat o fac alimentele proaspete sau cele gatite in casa. Asta deoarece procesarea determina interactiuni diferite cu hormonii care ne regleaza pofta de mancare. Studii la fel de recente (din <a href=\"https:\/\/www.bmj.com\/content\/365\/bmj.l1451\" target=\"_blank\" rel=\"noopener noreferrer\">Franta<\/a> si <a href=\"https:\/\/www.bmj.com\/content\/365\/bmj.l1949\" target=\"_blank\" rel=\"noopener noreferrer\">Spania<\/a>) au concluzionat ca riscul unei boli de inima, unui atac cerebral sau al mortii premature creste odata cu cantitatea de mancare ultraprocesata. Participantii care au consumat cele mai procesate alimente au avut cu 23% mai multe sanse de a face boli cardiovasculare (in primul studiu) si cu 62% mai multe sanse sa moara in urmatorii 20 de ani (in al doilea studiu).<\/p>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"4-dulciurile-riscuri-%e2%80%93-diabet-cancer-si-boli-de-inima\"><\/span>4. Dulciurile (riscuri \u2013 diabet, cancer si boli de inima).<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13122 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/dulciuri-din-comert.jpg\" alt=\"dulciuri din comert\" width=\"640\" height=\"426\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/dulciuri-din-comert.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/07\/dulciuri-din-comert-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p style=\"text-align: justify;\">Alchimistul, medicul si filozoful elvetian Paracelsus (1493-1541) spunea ca \u201eSola dosis facit venenum\u201d (in traducere, \u201eOtrava se reduce la dozaj\u201d), zicala care se aplica atat de bine in cazul zaharului\u2026 Gustul dulce se gaseste natural in numeroase fructe, cereale si lactate, iar zaharul rafinat este adaugat alimentelor pentru a le mari termenul de valabilitate si gustul.<\/p>\n<p style=\"text-align: justify;\">Pe langa faptul ca te determina sa iti cresti foarte rapid numarul de calorii \u201egoale\u201d consumate (si kilogramele aratate de cantar), dulciurile in exces nu provoaca doar carii si senzatia constanta de foame, ci si: rezistenta la insulina si diabet (conform cercetarilor de specialitate din <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/20693348\" target=\"_blank\" rel=\"noopener noreferrer\">2010<\/a>, <a href=\"https:\/\/journals.plos.org\/plosone\/article?id=10.1371\/journal.pone.0057873\" target=\"_blank\" rel=\"noopener noreferrer\">2013<\/a> si <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/24555673\" target=\"_blank\" rel=\"noopener noreferrer\">2014<\/a>), impulsionarea activitatii unei proteine (<em>\u03b2<\/em>-catenina) implicate in progresia cancerului (<a href=\"https:\/\/www.sciencedaily.com\/releases\/2013\/02\/130201100149.htm\" target=\"_blank\" rel=\"noopener noreferrer\">2013<\/a>) si stimularea dezvoltarii tumorilor (<a href=\"https:\/\/www.nature.com\/articles\/s41467-017-01019-z\" target=\"_blank\" rel=\"noopener noreferrer\">2017<\/a>), cancer pancreatic (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/12208894\" target=\"_blank\" rel=\"noopener noreferrer\">2002<\/a>, <a href=\"https:\/\/academic.oup.com\/ajcn\/article\/84\/5\/1171\/4649305\" target=\"_blank\" rel=\"noopener noreferrer\">2006<\/a>, <a href=\"https:\/\/academic.oup.com\/annonc\/article\/23\/10\/2536\/193670\" target=\"_blank\" rel=\"noopener noreferrer\">2012<\/a>), cresterea nivelului trigliceridelor, a tensiunii si boli de inima (<a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pubmed\/22440121\" target=\"_blank\" rel=\"noopener noreferrer\">2012<\/a>, <a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/25717381\" target=\"_blank\" rel=\"noopener noreferrer\">2014<\/a>, <a href=\"https:\/\/jamanetwork.com\/journals\/jamainternalmedicine\/fullarticle\/1819573\" target=\"_blank\" rel=\"noopener noreferrer\">2014<\/a>, <a href=\"http:\/\/www.ncbi.nlm.nih.gov\/pubmed\/25735740\" target=\"_blank\" rel=\"noopener noreferrer\">2015<\/a>). In timp, asta inseamna vesti proaste, spun cercetarile: fiecare doza suplimentara de 350 ml de suc de fructe\/zi este asociata cu un risc de deces cu 24% mai mare si fiecare doza suplimentara de 350 ml de bauturi cu zahar adaugat\/zi este asociata cu un risc de deces cu 11% mai mare (<a href=\"https:\/\/jamanetwork.com\/journals\/jamanetworkopen\/fullarticle\/2733424?widget=personalizedcontent&amp;previousarticle=2733417\" target=\"_blank\" rel=\"noopener noreferrer\">2019<\/a>), iar persoanele care beau mai multe astfel de sucuri sunt predispuse problemelor de inima si cancerului (<a href=\"https:\/\/www.ahajournals.org\/doi\/10.1161\/CIRCULATIONAHA.118.037401\" target=\"_blank\" rel=\"noopener noreferrer\">2019<\/a>).<\/p>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"6-cerealele-rafinate-risc-%e2%80%93-obezitate\"><\/span>6. Desi au gust bun, sunt digerate de corp aproape la fel de rapid pe cat au fost ingerate, sunt transformate in zahar, nu mentin satietatea ore in sir si nu ofera fibrele, proteinele, vitaminele, mineralele si grasimile din tarate si germeni (pe care le pastreaza doar cerealele integrale).
