Ambii sunt termeni utilizati in principal cand vine vorba despre diabet de tip 1, 2 si gestational (specialistii in domeniu sfatuind pacientii sa tina cont de ele), dar sunt utili de inteles si aplicat si in cazul alimentatiei celorlalti dintre noi. Indicele glicemic este un numar care masoara \u2013 pe o scara de la 0 la 100 \u2013 cresterea relativa a glicemiei, la 2 ore de la consumul respectivului aliment. Cand mananci ceva, organismul tau converteste carbohidratii din alimentatie in glucoza (molecula zaharoasa simpla, care te alimenteaza energetic). Glucoza intra in fluxul sangvin, iar pancreasul secreta insulina, pentru a ajuta moleculele dulci sa paraseasca sangele si sa ajunga in celule, energizandu-le. Cu cat valoarea IG este mai apropiata de 0, cu atat impactul acelui aliment asupra nivelului glicemiei tale va fi mai redusa: un suc de fructe e aproape glucoza pura, deci intra in sange instantaneu si glicemia creste rapid; un mar contine si amidon, si fibre, deci pana ajunge la glucoza organismul tau munceste mai mult, glicemia fiind modificata treptat.<\/p>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13805 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/prajituri-indice-glicemic.jpg\" alt=\"prajituri indice glicemic\" width=\"640\" height=\"427\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/prajituri-indice-glicemic.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/prajituri-indice-glicemic-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Daca iti umpli mereu farfuria de dulciuri, orez alb, cartofi prajiti si produse de patiserie, iti va fi greu sa iti controlezi glicemia, chiar daca iti administrezi insulina si iei medicamente de diabet. Daca alegi, in schimb, fructe si legume in stare naturala, nuci, seminte si cereale integrale, medicul tau diabetician nu va avea motive de ingrijorare. Alimentele cu un IG mare nu doar cresc repede glicemia, ci provoaca si o scadere la fel de rapida a acesteia, care echivaleaza cu instalarea senzatiei de foame; as ajungi sa mananci in exces si sa acumulezi kilograme nedorite si nesanatoase.<\/p>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"tipuri-de-indice-glicemic\"><\/span>Tipuri de indice glicemic<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13806 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/fructe-indice-glicemic.jpg\" alt=\"fructe indice glicemic\" width=\"640\" height=\"426\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/fructe-indice-glicemic.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/fructe-indice-glicemic-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>IG al alimentelor (portii individuale) este clasificat in urmatoarele 3 tipuri:<\/p>\n<ul>\n<li>\n<p style=\"text-align: justify;\"><strong>mic (<\/strong><strong>sub 55) <\/strong>\u2013 alimente care au un impact minimal asupra glicemiei si insulinei, continand carbohidrati digerati, absorbiti si metabolizati incet (legume verzi, majoritatea fructelor, morcovi, cartofi dulci, fasole, naut, linte, soia, orz, bulgur, paste si paine integrale, lapte, iaurt, lapte de soia, ciocolata)<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>mediu (<\/strong><strong>56-69) <\/strong>\u2013 alimente care au un impact mediu asupra glicemiei si insulinei (porumb dulce, popcorn, banane, dovleac, orez brun\/salbatic, ananas, stafide, fulgi de ovaz, cuscus, inghetata, miere, chipsuri, sucuri carbogazoase)<\/p>\n<\/li>\n<li>\n<p style=\"text-align: justify;\"><strong>mare (<\/strong><strong>peste 70) <\/strong>\u2013 alimente bogate in carbohidrati digerati, absorbiti si metabolizati cel mai rapid de corp, ridicand nivelul glicemiei si insulinei (zahar, orez alb\/expandat, fulgi de porumb, paine alba, covrigei, paste albe, cartofi, dovleac, pepene rosu, lapte de orez)<\/p>\n<\/li>\n<\/ul>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"ce-determina-indicele-glicemic-al-unui-aliment\"><\/span>Ce determina indicele glicemic al unui aliment?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13807 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/legume-la-tigaie.jpg\" alt=\"legume la tigaie\" width=\"640\" height=\"426\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/legume-la-tigaie.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/legume-la-tigaie-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>Doua alimente cu aceeasi cantitate de carbohidrati pot avea indici glicemici diferiti \u2013 acest indice este o estimare, alimentele fiind influentate de diversi factori: tipul de carbohidrati (cei rafinati au un IG ridicat), modalitatea de gatire (cu cat timpul de gatire este mai mare, cu atat IG creste; grasimea si acidul scad IG), gradul de coacere (cu cat e mai mare, cu atat creste si IG), combinatia alimentara in care ii consumi (fibrele scad IG total al unei mese), varsta si stilul de viata al consumatorului (diabetul poate produce complicatii care intarzie golirea stomacului, ceea ce inseamna ca absorbtia carbohidratilor se va face mult mai lent).<\/p>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"indicele-glicemic-vs-incarcatura-glicemica\"><\/span>Indicele glicemic vs. incarcatura glicemica<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13808 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/pepene-rosu-indice-glicemic.jpg\" alt=\"pepene rosu indice glicemic\" width=\"640\" height=\"426\" srcset=\"https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/pepene-rosu-indice-glicemic.jpg 640w, https:\/\/sanovita.ro\/blog\/wp-content\/uploads\/2019\/09\/pepene-rosu-indice-glicemic-324x216.jpg 324w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/>O alta problema legata de IG al diverselor alimente sunt portiile. Cand calculeaza indicele glicemic, specialistii masoara raspunsul organismului subiectilor la 2 ore dupa consumul a 50 g de carbohidrati din alimentul testat, comparand rezultatul cu cel de referinta, al glucozei pure (care are un IG de 100). Dar in viata de zi cu zi nu toate produsele sunt consumate in cantitati care sa contina 50 g de carbohidrati: <a href=\"https:\/\/www.glycemicindex.com\/foodSearch.php?num=1360&amp;ak=detail\" target=\"_blank\" rel=\"noopener noreferrer\">pepenele rosu<\/a>, de exemplu, are un indice glicemic de 80, dar o portie tipica contine doar 6 g de carbohidrati (ar trebui sa mananci 1 kg de pepene odata ca sa ajungi la 50 g de carbohidrati!). De aceea, cercetatorii au creat o a doua cifra conexa: incarcatura glicemica \u2013 care masoara impactul unei portii tipice din fiecare aliment asupra glicemiei si care este mai utila in practica decat IG (in cazul pepenelui rosu, aceasta este de 5).<\/p>\n<p style=\"text-align: justify;\">Incarcatura glicemica este si ea de trei tipuri:<\/p>\n<ul>\n<li><strong>mica (<\/strong><strong>sub 10) <\/strong><\/li>\n<li><strong>medie (<\/strong><strong>11-19) <\/strong><\/li>\n<li><strong>mare (<\/strong><strong>peste 20)<\/strong><\/li>\n<\/ul>\n<blockquote class=\"td_quote_box td_box_center\">\n<p style=\"text-align: justify;\"><span style=\"color: #008000;\"><strong><em>Pentru a verifica IG si incarcatura glicemica ale unui aliment, foloseste <\/em><em>cea mai mare <a href=\"http:\/\/www.glycemicindex.com\/foodSearch.php\" target=\"_blank\" rel=\"noopener noreferrer\">baza de date<\/a> <\/em><em>oficiala internationala, cea <\/em><em>a <\/em><em>Universitatii din Sydney!<\/em><\/strong><\/span><\/p>\n<\/blockquote>\n<h2 style=\"text-align: left;\"><span class=\"ez-toc-section\" id=\"de-ce-este-important-indicele-glicemic\"><\/span>De ce este important indicele glicemic<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p style=\"text-align: justify;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-11252 aligncenter\" src=\"https:\/\/www.sanovita.ro\/blog\/wp-content\/uploads\/2019\/02\/tipuri-de-diabet.jpg\" alt=\"tipuri de diabet\" width=\"1920\" height=\"1279\" \/>Persoanele cu diabet nu pot produce insulina (in cazul diabetului de tip 1) sau nu raspund bine la insulina produsa de organismul propriu (diabetul de tip 2\/zaharat), deci trebuie sa isi monitorizeze si managerieze cu atentie nivelul glicemiei, pastrandu-l in echilibru. Pentru ei, consumul de alimente cu un indice glicemic scazut este util. Persoanele sanatoase pot observa usor ca un bol de fulgi de ovaz consumat la micul dejun le va tine de foame mai mult timp decat o prajiturica, tot IG fiind \u201eresponsabil\u201d de asta.<\/p>\n<p style=\"text-align: justify;\">Atentie: asta nu inseamna ca iti poti baza intregul regim alimentar pe indicele glicemic si incarcatura glicemica, ignorand continutul de grasimi, calorii, vitamine si minerale! Alimentele prajite rapid intr-o tona de ulei vor avea un IG scazut, datorita continutului mare de grasimi, dar nu sunt mai sanatoase decat un mar.
