Acestea \u00eenlocuiau f\u0103ina de gr\u00e2u \u00een diverse preparate, precum p\u00e2inea neagr\u0103, sau erau folosite ca liant \u00een umpluturi cu legume.<\/p>\n<p>C\u00e2t despre legumele umplute, nici nu mai e nevoie s\u0103 le introducem. Cu siguran\u021b\u0103 \u00ee\u021bi mai aduci aminte de gustul ardeilor umplu\u021bi din copil\u0103rie. Sau de mirosul ardeilor cop\u021bi, proasp\u0103t sco\u0219i de pe jar, sau de aroma intens\u0103 a salatei de ardei cop\u021bi. Re\u021betele vechi trezesc mereu amintiri, gusturi familiare, mirosuri care \u00eenc\u0103lzesc sufletul \u0219i scene dintr-un timp \u00een care m\u00e2ncarea era simpl\u0103, dar f\u0103cut\u0103 cu r\u0103bdare \u0219i suflet.<\/p>\n<p>Asta nu \u00eenseamn\u0103, \u00eens\u0103, c\u0103 ele nu pot fi reg\u00e2ndite. Din contr\u0103, pot fi adaptate \u0219i scoase din nou la lumin\u0103 sub o alt\u0103 form\u0103, diferit\u0103, dar cel pu\u021bin la fel de gustoas\u0103. A\u0219a se na\u0219te \u0219i aceast\u0103 re\u021bet\u0103: ce pleac\u0103 de la clasicul ardei umplut, \u00eens\u0103 \u00eel preg\u0103tim cu \u201eliantul\u201d folosit pe vremuri \u2013 f\u0103in\u0103 din semin\u021be de dovleac \u2013 al\u0103turi de quinoa \u0219i legume. \u00cembog\u0103\u021bim preparatul cu proteine valoroase, oferindu-i un aport nutritiv remarcabil. Presar\u0103 sare peste ei, acoper\u0103-i cu un capac sau folie \u0219i las\u0103-i s\u0103 se \u00een\u0103bu\u0219e 10\u201315 minute. Cur\u0103\u021b\u0103-i apoi cu grij\u0103, \u00eencerc\u00e2nd s\u0103-i p\u0103strezi c\u00e2t mai \u00eentregi. Taie cotorul \u0219i scoate semin\u021bele.<\/p>\n<p><strong>Prepararea umpluturii:<\/strong><br \/>\nFierbe quinoa \u00een ap\u0103 cu sare (1 parte quinoa la 2 p\u0103r\u021bi ap\u0103), p\u00e2n\u0103 se absoarbe complet lichidul.<\/p>\n<p>Pr\u0103je\u0219te semin\u021bele de dovleac \u00eentr-o tigaie uscat\u0103 p\u00e2n\u0103 devin aurii, apoi macin\u0103-le grosier. Amestec\u0103-le cu semin\u021bele de c\u00e2nep\u0103.<\/p>\n<p>Cur\u0103\u021b\u0103 legumele. Morcovul \u0219i \u021belina se dau pe r\u0103z\u0103toarea mic\u0103. Ceapa \u0219i usturoiul se toac\u0103 m\u0103runt.<\/p>\n<p>C\u0103le\u0219te ceapa \u0219i usturoiul \u00een ulei, apoi adaug\u0103 morcovul, \u021belina, chimenul, sare \u0219i piper. Adaug\u0103 pu\u021bin\u0103 ap\u0103 \u0219i las\u0103-le s\u0103 se \u00eenmoaie la foc mediu timp de 5\u201310 minute.<\/p>\n<p>Dup\u0103 ce s-au g\u0103tit legumele, adaug\u0103 quinoa fiart\u0103, amestecul de semin\u021be \u0219i asezoneaz\u0103 dup\u0103 gust. La final, adaug\u0103 p\u0103trunjelul tocat.<\/p>\n<p><strong>Umplerea ardeilor:<\/strong><br \/>\nUmple ardeii cu compozi\u021bia ob\u021binut\u0103, cu grij\u0103 s\u0103 nu se rup\u0103. A\u0219az\u0103-i \u00eentr-un vas termorezistent, strope\u0219te cu pu\u021bin ulei de m\u0103sline \u0219i coace-i la 180\u00b0C timp de aproximativ 10 minute \u00eenainte de servire.<\/p>\n<p>Sunt foarte gusto\u0219i \u0219i servi\u021bi la temperatura camerei. Nu trebuie s\u0103 fie neap\u0103rat fierbin\u021bi. Din contr\u0103, merg perfect a\u0219a \u00eentr-o zi c\u0103lduroas\u0103 de var\u0103. Fierbe totul la foc mediu timp de c\u00e2teva minute.<br \/>\n\u2022 Adaug\u0103 treptat amidonul dizolvat pentru a \u00eengro\u0219a sosul (dac\u0103 mai este nevoie, \u00een func\u021bie de ce sm\u00e2nt\u00e2n\u0103 folose\u0219ti).<br \/>\n\u2022 Asezoneaz\u0103 dup\u0103 gust. Po\u021bi \u201efor\u021ba\u201d pu\u021bin nota cu piperul \u2013 merge foarte bine. Dac\u0103 dore\u0219ti, po\u021bi ad\u0103uga \u0219i c\u00e2teva boabe \u00eentregi de piper verde pentru o arom\u0103 subtil\u0103 \u0219i elegant\u0103.<\/p>\n<p>Serve\u0219te sosul c\u0103ldu\u021b l\u00e2ng\u0103 ardei.[\/vc_column_text][vc_column_text]Dac\u0103 \u021bi-au r\u0103mas ardei neumplu\u021bi poti face rapid o salat\u0103 delicioas\u0103 ce merge desigur cu preparatul. Taie ardeii f\u00e2\u0219ii lungi, presar\u0103 sare, piper, ulei de m\u0103sline \u0219i pu\u021bin\u0103 crem\u0103 de o\u021bet balsamic (sau otet balsamic).
