Textura fin\u0103 este ob\u021binut\u0103 din ov\u0103z fin m\u0103cinat \u0219i gelatinizat cu amidon, \u00eendulcit\u0103 cu zah\u0103r brun sau chiar \u0219i cu miere \u0219i parfumat\u0103 cu vanilie natural\u0103. Perele caramelizate lent, \u00eenv\u0103luite \u00een pudr\u0103 de ro\u0219cove \u0219i anason stelat, evoc\u0103 dulcea\u021ba unei marmelade \u0219i dau profunzime prin gustul dulce, cu note de caramel, cacao \u0219i mal\u021b al ro\u0219covelor.[\/vc_column_text][vc_column_text]&#8221;Crema de zah\u0103r ars&#8221; apare frecvent \u00een c\u0103r\u021bile de bucate interbelice \u0219i postbelice. Textura final\u0103 trebuie s\u0103 fie asem\u0103n\u0103toare cu cea a unei creme clasice, neted\u0103, dar bine legat\u0103.<br \/>\n\u2022 Toarn\u0103 crema \u00een vase ceramice individuale (ramekinuri) \u0219i las\u0103-le la r\u0103cit la temperatura camerei.<br \/>\n\u2022 Transfer\u0103 apoi la frigider pentru cel pu\u021bin 2 ore, pentru ca textura s\u0103 se stabilizeze complet.<\/p>\n<p><strong>Perele caramelizate<\/strong><\/p>\n<p>\u2022 Cur\u0103\u021b\u0103 perele \u0219i taie-le \u00een cuburi mici.<br \/>\n\u2022 \u00centr-o tigaie larg\u0103, caramelizeaz\u0103 zah\u0103rul brun la foc mic, p\u00e2n\u0103 cap\u0103t\u0103 o nuan\u021b\u0103 aurie.<br \/>\n\u2022 Adaug\u0103 perele t\u0103iate, apoi pudra de ro\u0219cove, ghimbirul, coaja de l\u0103m\u00e2ie, anasonul stelat, sucul de l\u0103m\u00e2ie \u0219i apa.<br \/>\n\u2022 G\u0103te\u0219te la foc mediu, amestec\u00e2nd ocazional, p\u00e2n\u0103 c\u00e2nd perele se \u00eenmoaie \u0219i lichidul se reduce u\u0219or, form\u00e2nd un sos dens, aromat.<br \/>\n\u2022 Ia tigaia de pe foc \u0219i las\u0103 amestecul s\u0103 se r\u0103ceasc\u0103 complet.<\/p>\n<p><strong>Caramelizarea final\u0103<\/strong><\/p>\n<p>\u2022 Scoate crema din frigider. Presar\u0103 deasupra fiec\u0103rei por\u021bii c\u00e2te 1 linguri\u021b\u0103 de zah\u0103r brun \u0219i arde-l cu o tor\u021b\u0103 de buc\u0103t\u0103rie p\u00e2n\u0103 ob\u021bii o crust\u0103 crocant\u0103.<br \/>\n\u2022 Dac\u0103 nu ai tor\u021b\u0103, po\u021bi topi zah\u0103rul separat \u00eentr-o cr\u0103ticioar\u0103 p\u00e2n\u0103 devine caramel lichid, apoi toarn\u0103 rapid un strat sub\u021bire deasupra fiec\u0103rei por\u021bii, cu ajutorul unei linguri.[\/vc_column_text][vc_column_text el_class=&#8221;the-post-section-title&#8221;]Servire[\/vc_column_text][vc_column_text]\u2022 A\u0219az\u0103 deasupra cremei c\u00e2te 1\u20132 linguri de pere caramelizate cu siropul format \u00een tigaie. Poti ad\u0103uga \u0219i c\u00e2teva frunze de ment\u0103 proasp\u0103t\u0103.
