La final se emulsioneaz\u0103 cu uleiul de m\u0103sline cu un blender vertical, turnat \u00een fir sub\u021bire, p\u00e2n\u0103 ob\u021bii un piure lucios \u0219i stabil. Se potrive\u0219te de sare dup\u0103 gust.<\/p>\n<p><strong>Salsa de p\u0103trunjel<\/strong><\/p>\n<p>P\u0103trunjelul se toac\u0103 foarte fin. Ceapa se toac\u0103 fin. Migdalele pr\u0103jite se toac\u0103 grosier pentru textur\u0103 sau se las\u0103 jum\u0103t\u0103\u021bi. Se amestec\u0103 p\u0103trunjelul cu \u0219alota, migdalele, m\u0103slinele taiate, uleiul de m\u0103sline, sarea \u0219i l\u0103m\u00e2ia. Dac\u0103 vrei, adaugi cimbru proasp\u0103t foarte fin, pu\u021bin, ca accent aromatic.<\/p>\n<p><strong>P\u0103str\u0103vul<\/strong><\/p>\n<p>Fileurile se tamponeaz\u0103 cu un \u0219ervet de buc\u0103t\u0103ri, se asezoneaz\u0103 cu sare \u0219i piper. Se rumenesc \u00een tigaie \u00eencins\u0103 cu putin ulei de m\u0103sline, rapid, c\u00e2t s\u0103 prind\u0103 crust\u0103 u\u0219oar\u0103 \u0219i s\u0103 r\u0103m\u00e2n\u0103 suculent \u00een interior (\u00een func\u021bie de grosime, c\u00e2te 2-3 minute pe partea cu pielea \u0219i 30-60 secunde pe cealalt\u0103 parte).<\/p>\n<p><strong>Montaj<\/strong><br \/>\nPe farfurie \u00eentinzi piureul de tofu cu vinete, a\u0219ezi p\u0103str\u0103vul rumenit, apoi pui salsa de p\u0103trunjel cu migdale deasupra sau lateral, ca element proasp\u0103t \u0219i crocant.
